Learn what it takes to be a Pizzaiolo
We're back! It was a long two years. All that's needed now are your hands, your passion, and a little guidance from us and you'll be making and eating exceptional pizza. First I’ll show you how to make dough … and eat a little pizza. I'll teach you about the importance of time and temperature, about different yeasts and how to make poolish. Oh... it's recess... gotta eat some pizza. Next we'll practice what is probably the hardest yet funnest part of all.... opening up a Neapolitan pizza ball. You'll learn to massage the dough, so the air moves outward toward the edge - otherwise known as the cornicione. Now, take a moment , have some pizza. You deserve it. Then you'll learn to dress the pizza and then then launch it into the wood-fired oven. There's no turning back now. In 90 seconds your pizza will be finished. We'll practice this over and over using the same techniques I learned from a world champion. This will be the best class ever because you get to eat your homework!
Japanese Spoon Carving
Japanese wood carving is rooted in personal wellness, relaxation, and an age-old meditative tradition of making with your hands. For me, it's the best way to express and channel my creative energy as a designer. I will teach you how to hand carve your own wooden spoon using traditional Japanese tools and techniques. The class will start with a slow breathing exercise that leads into a discussion of different wood types, an explanation of the tools required, and an overview of the techniques used to cut wood. Once you have a basic understanding, I will guide you through the process of carving the bowl of the spoon with the spoon gouge, then designing and whittling the handle and top of the spoon. When the final design has been reached, we will find zen in our creation. Other things to note Please wear closed-toe shoes, and clothes you don't mind getting dirty. We will be carving and making a beautiful mess! Class will be held outside in Oakland if weather permits, exact location sent out a few days before class.

Learn how to cook & throw the Ultimate Dumpling Dinner Party
Dumplings are a San Francisco staple, and in this hands-on cooking class & 3-course dinner party, you'll learn how to make mouthwatering dumplings from scratch! Discover the secrets of how to create delicious dumpling wrappers, build flavorful sauces, and master the art of folding beautiful dumpling pleats. It's perfect for a unique date night, as a family cooking activity, as a team building offsite, or just on your own -- a class suitable for all levels, from new to seasoned chefs. We'll start with a blind tasting of my favorite soy sauces to deeply understand and appreciate umami. Then, learn traditional dumpling making techniques: dough kneading, skin rolling, and artistic pleating folds. We'll use my family recipe for a mouthwatering pork stuffing! (For non-pork eaters, a delicious tofu-based stuffing is offered) Once you've created your batch of dumplings, we'll sit at the dining table to create your very own secret dipping sauce. We'll also eat a slow-cooked pork belly braise: a classic Shanghaineese dish that highlights the umami of soy sauce and principles of slow cooking using local, organic pork. We finish with a red bean dessert -- you'll be in a food coma at the end of the experience! You'll also take home a recipe guide. Whether you're celebrating a special occasion or expanding your cooking skills, the Dumpling Dinner Party is a must-try experience!
Pottery in the Mission
We will start with some of the interesting history of the studio space. Then I will get you situated on the wheel and show you how to properly secure your lump of clay. After the clay is secured we start the wheel spinning nice and fast. I will show you how to center the clay which is a very important (and frustrating) stage of making pottery on the wheel. After we successfully center the clay, you will explore how the clay moves and reacts to your touch. We will work to form a simple shape such as a bowl or cup. To finish off we will do some clean up of the form and remove the piece from the wheel in order to start experimenting with the next piece. You can expect to get to practice with around 6 lumps of clay (more if you are ambitious) and most people will create 2-3 pieces by the end of the session. Pieces will be professionally finished, fired, and glazed after the experience. This process takes at least 3 weeks. After the pieces are finished you can pickup in the studio or they can be shipped. Shipping costs are paid by the guest. Other things to note Come wearing clothes that you don't mind getting messy. We will provide aprons. If you have long hair plan to have a hair tie or a way to secure your hair back. Trim long nails if you are able.

Next, we’ll check out the oldest bakery in Chinatown, a church that survived the 1906 earthquake, the oldest temples in the USA, all while sipping some delicious bubble tea. As we approach our final hour, we head to a local tea shop and learn about the role of tea in traditional Chinese medicine with a 30-minute tasting.
