Why locals recommend it
Housemade noodles are nothing new, but the clean, minimal Shichisai takes it a step further. The noodles are literally made by hand when you order. And the soup is awesome. It’s Kitakata style, from Fukushima Prefecture, and really heavy with niboshi—dried sardines—so it has lots of umami. Get here a bit before the opening time. It takes about 10 minutes to make the noodles from scratch with each order, and a long line means a long wait.
