Cuisine: Rotisserie Chicken + Salads Meals: Lunch / Dinner Opened in December, Grils is Ambiente’s newest concept that focuses on rotisserie chicken and local artisanal cider on tap. Here, chef Markéta Libánská (formerly of Ambiente’s popular butcher shop Naše Maso) carefully sources free-range birds from a small farm outside the city. She brines the chickens, then throws them on the restaurant’s centerpiece grill — also its only heat source. Diners can order a quarter, half, or whole bird accompanied by seasonal sides like grilled corn and sauces like house-made sweet-and-sour.
