Looking for something authentic and fresh? Tres Colores is a new spot in the Plaza with exactly that! Three local chefs banded together to make this place happen, and they're doing traditional New Mexican cuisine in their own style.

So I’m quite fond of Tres Colores as you may have figured out because I’ve listed it in several categories here. It’s great mexican food, with a salsa and topping bar, fabulous owners and staff (good vibes here!) and a place we go to (A LOT) for casual breakfast, lunch or dinner. It’s almost embarrassing how often we pick up a carne asada burrito (no rice for me, please, and put my Chile sauce on the side. Mild!) I don’t know what would make them “special”, but the pinto beans inside my burrito, here, just seem better than anywhere else!!
