What you'll do

Explore a world of healthy probiotics and sustainable living

Making your own miso is a fabulous experience. It's such a simple recipe and so delicious. We are miso facilitators and will introduce you to the world of fermentation during our workshop. Fermented foods help us stay young, healthy, and beautiful, and we'd like to share our knowledge of "hakko"—fermented foods—with you. First, we'll offer a lunch made of Japanese fermented foods including miso, koji, fermented rice, and more. We'll prepare different kinds of miso so you can taste and learn the differences. After lunch, we'll start making our own miso. First, we'll mash soybeans previously cooked in boiling water. When the beans become a paste, we'll add salt and rice koji, and mix well. Then we'll transfer this into a container and label it for you to take home.

Host on Airbnb since 2014

We're a couple who want to introduce Japanese fermented food culture to the world. We teach the traditional way to make it, and have held miso workshops throughout Japan since 2011. In 2013, we moved to the mountains to seek a sustainable lifestyle and grow our own rice and soybeans. We've held miso-making workshops in Vancouver, Vancouver Island, San Francisco, and other spots in California.

It is held in the mountainous village in the north part of Kyoto, in a traditional Japanese house which has been renovated nicely. The area is surrounded by beautiful mountains and rivers. Recommend place for hiking and relaxing by the river. Can offer a nature tour in the local area.

You don't need to bring anything. It is a little far from downtown Kyoto but it is worth the travel to escape from hustle and bustle of the city.
