Miso soup and Green tea will be served.

Special Dinner class (16:30 - 20:00)¥8,000~
We will make 1 serving of deluxe sushi set including fresh seafood.
You can enjoy a full set of sushi dinner. Drinks will be served including Sake(rice wine).

Ingredients differ depending on the day.

You’ll be welcomed into my home kitchen. At first, we will make sushi rice, vinegared rice. I will teach you how to make sushi rice correctly and recipe. And we will practice how to make a rectangular shape rice ball by hand.
Nigiri sushi: The trickiest part of making nigiri is making a rectangular shape rice ball softly and quickly using the technique. We will practice the technique which is inherited for many years in my restaurant. And then I’ll teach you how to slice the ingredients so that it looks thick and delicious for nigiri sushi.
Roll sushi: We will also practice how to take a sheet of nori (seaweed), put sushi rice and ingredients on it and then roll it all into a perfect cylinder using a bamboo mat.
Finally, you will make the one serving of sushi set using real ingredients. By the end of the lesson, you’ll be able to apply the techniques you learned to make sushi in your own kitchen.
In the end, we will eat the sushi set you made and miso soup

My family has owned and run a sushi restaurant in Asakusa since 1901. I’m the restaurant’s third sushi chef, and I’m committed to continuing the tradition of authentic Edomae (Tokyo-style) sushi. Developed in the early 1800s by a chef in Edo (present-day Tokyo), the technique centers around bite-sized servings formed by hand.

Where you'll be

At first we will go to a grocery store near my house and I will explain you what ingredients we need for making sushi. We’ll practice the technique of sushi-making at my home in Asakusa. This older neighborhood has maintained a traditional atmosphere. The main attraction, Sensoji, the city’s oldest Buddhist temple, is a short walk away. After the workshop, you can stroll the temple grounds and the street-side parks.

This man in an expert in sushi making, he has clearly thought out the structure of the experience. You start with going around the local supermarket and he explains the basic of making nigiri sushi from the types of fish to the rice and the condiments. I learnt so much about making one of my favorite foods and had a great time. He is a very patient teacher.

Shinohara San is a true professinal and is an amazing Sensei. I got to enjoy his home as he taught me the several types of ways to make sushi. He is very passionate about his craft and is from a long line (3rd Generation) of Sushi Chef. He was born in the very same Sushi resturant handed down to him from his father, that was handed down from his grandfather. Not only will you recieve very precise instuctions with a tasty lunch, but he will also educate you on the sushi history and what it takes to become a true sushi master.

We loved the content of the class. Nori san has been so patient and passionate in telling us the stories and knowledge of some main kinds of food ingredient at the grocery shop. Interesting part. After that the sushi making session was excellent Nori san taught us basic necessary skill for authentic Nigiri sushi - from rolling rice ball, to cutting fish, table manner and even when to mix the wasabi in soy sauce and how to bite the sushi..........He is such a passionate master chef- he doesn’t mind spending more time even the class was over run. He made sure everyone of us has a good understanding and mastering of the hands skill in preparing a sushi. He needed us to Keep practising without a rush to just finish the class. He is also a humourous guy. Just one advice, we four could make the sushi roll altogether so as to make the rhymes a bit light and quick. For the other parts of the lesson, we agreed to do it one by one. Not commercial not touristy Just a heartfelt tutorial. Thank you very much, Nori san
