What you'll do

At my house, an ancient medieval watch tower of the 11th century, leaning against the Ancient Walls of Sant'Ambrogio, at the foot of the suggestive Sacra di San Michele, and in a colorful and welcoming setting, guests will witness the preparation of an ancient traditional Piedmontese dish: bagna càuda.During the dinner, a work-shop will be set up with all the phases of the realization of the bagna càuda: the cleaning of the anchovies, the preparation of the base cream and the vegetables, the technique of cleaning the garlic, all, following ancient local traditions.During the dinner and the work-shop, moreover, guests will be served various appetizers: lingua al verde, vitello tonnato and carne all'albese. All this accompanied by a quarter of a liter of good Piedmontese wine and bunet as a dessert.

Fernando

I am a cooking chef who has worked for more than 20 years in restaurants in Italy, London, Brazil and other locations around the world. My cuisine is based on creativity and the use of local products and ancient peasant recipes, which I like to research in books and traditions of the area where I live. Mine is a cuisine that blends anthropology (which is my degree) and gastronomy. The Valsusino area where I live is rich in ancient culinary traditions.
